Southern Green Tomato Relish is the perfect bite of summers spent with grandma in the garden. Light up your taste buds with this southern classic!

Combine tomatoes, onion, and pepper in large bowl.
Add salt, mix, and let stand for an 1 hour or so.
Drain vegetables. Combine vegetables, sugar, pepper, mustard,
red pepper flakes, celery seed and celery salt in a large pot.
Tie cloves in cheesecloth and add to mixture.
Stir in vinegar and simmer for 20-25 minutes.
Take out spice bag. Pack the relish into hot jars.
Be sure to leave at least 1/4 inch head-space.
Place canning lids on jars and process half pints
for 10 minutes in hot water bath.
